That s the reason why most of the recipes have come from Sioras in the local community, who were thrilled by our British enthusiasm and eager to pass on their kitchen knowledge, expertise and traditions. Some recipes are preceded by little anecdotes which reflect the humor and eccentricity, for which the Cephalonians are so well renowned. Cephalonian food is of course best enjoyed when visiting the beautiful island, but with this book it may be equally well savoured anywhere in the world.
